Masala Egg Bites

Egg bites have always been a beloved family staple, but I couldn't resist the urge to infuse them with the vibrant flavors of Indian cuisine. Inspired by the rich and aromatic spices of India, I embarked on a culinary experiment to craft the perfect fusion dish.

Ingredients:

  • 5-7 Eggs

  • 1/4 Cup of Milk

  • Oil

  • Shredded Cheese

  • Diced Jalapeño

  • Diced Tomato

  • Cumin Powder

  • Coriander Powder

  • Red Chili Powder

  • Turmeric

  • Garam Masala

  • Salt

Instructions:

  1. In an electric beater, pour 1/4 cup of milk and add spices to taste.

  2. Crack 5 eggs into the milk and spice mixture. For a milder version, set aside 2 eggs (see below).

  3. Mix everything thoroughly until well combined.

  4. In a pan, heat oil and sauté the diced jalapeño and tomato until softened.

  5. Once the vegetables are sautéed, add spices again to taste and stir until fragrant.

  6. Preheat the oven to 350°F and spray a muffin pan with baking spray.

  7. Spoon 2 teaspoons of the sautéed veggies into 4 compartments of the muffin pan.

  8. Pour the egg mixture into the compartments, leaving space at the top for the eggs to rise.

  9. Sprinkle shredded cheese on top.

  10. Bake at 350°F for 20 minutes or until the egg muffins are set and lightly golden on top.

Egg bites for kids:

  1. In an electric beater, pour a dash of milk and add salt to taste.

  2. Crack 2 eggs and mix everything thoroughly until well combined.

  3. In a sprayed muffin pan, add shredded cheese and pour the egg mixture.

  4. Sprinkle more shredded cheese on top.

  5. Bake at 350°F for 20 minutes or until the egg muffins are set and lightly golden on top.

Serve the Masala Egg Bites with crackers and dip for a delicious mid-afternoon snack.

  • When making an egg dish, don't fill the muffin compartments to the top. Leave space for it to rise while baking. This prevents overflow and ensures even baking.

  • Spice up mix and veggies for depth and balance. Try various spices for complexity.

  • Changing up the veggies in your dishes can add a delightful variety of flavors.
